Flour Tortillas
This Recipe Makes…
14-16 Tortillas
Ingredients
360 grams or about 3 cups all purpose flour
240 grams or about 1 cup hot water
75 grams or about ⅓ cup of cold butter or another fat like lard or oil
15 grams or about 1 tablespoon of kosher salt
4 grams or about 1 teaspoon of baking powder
Instructions
Step 1 Mixing The Ingredients - In a medium size mixing bowl, add the flour, salt, and baking powder. Mix together until evenly combined. Next, cut your cold butter into small pieces and add them to the dry ingredients. Using your hands, break the butter into smaller pieces and work it in the flour. Heat 1 cup of water and add it to the bowl. Starting with a large spoon, begin mixing the ingredients into a shaggy dough.
Step 2 Kneading The Dough - After the dough has come together in the bowl, place on a flour coated surface and start kneading by hand for a few minutes. Once the dough is no longer sticky and is smooth, cover with a towel and let rest for at least 15 minutes.
Step 3 Forming the Tortillas - Once the dough has rested, tear off a piece about 1 ½ “ across and roll it into a small ball. Lightly coat in flour and set aside to rest again while you continue forming all your dough into small balls. After that, flatten and form the small dough pieces to about 3”-4” across. Let these rest for another 10-15 minutes. Next, using a rolling pin, begin flattening and rolling the dough into tortillas about 7”-8” across. Lightly dust with flour and cover with a small piece of parchment or wax paper. Repeat and stack the rest on a plate.
Step 4 Cooking the Tortillas - Begin warming a large heavy pan on medium-high heat. Once hot, place a tortilla down. It should take about 30-45 seconds on each side to get a good even browning pattern. If under cooked or burned, adjust the heat as needed. Cover with a towel and continue cooking the rest of the tortillas. Serve and enjoy!
